What does SARS mean by a Verification of Assessment letter?

Does this mean that everything is sorted and done?

It means you have to submit supporting documentation in the form of all the documents you used to complete your tax return such an IRP5, Medical Aid Certificate and any other documents used. There will be a documents for review section on your Income Tax Working Page and you will upload files there. All this means is that SARS is doing a random check that the amounts and details you included are the same as their supporting documentation.
